Toffee and roasted nuts recipe

There are some things I like more than chocolate ... but one is caramel. Caramel cream and whipped cream! Place this sweet caramel with a touch of fried nuts for the perfect gift.

Great fun for any day and time of the year. Save it for Christmas! It is a sweet gift any time of the year.


We learned that my little boy had a chocolate allergy when he was younger ... so we had to look for other alternatives to "treat" him. Caramel is something that everyone can agree on.

In addition to the chocolate frosting it is great. My son is no longer allergic to chocolate, which was a great relief.

For fried almond tofu ingredients:

2 sticks (1 cup) real butter
1 1/3 cups castor sugar
4 tablespoons corn syrup
4 tablespoons water

The fried nuts are placed on a plate
(Spread on a plate ... Rotate 275 * every 30 minutes for 10 minutes)

And a silicone plate ... or a sheet covered with aluminum foil

You will need a pot with a thick bottom.
(Not under copper ... they burn very fast)



Step 1: Grease the nuts

Cut the nuts with a knife and place on a baking sheet or cover the edges with aluminum foil. Make them one layer thick.


Step 2: Boil the ingredients

Put butter, corn syrup, sugar and water in a heavy saucepan.

My pan is small ... but it still works! Turn the burner on.


Move slowly until it melts ... stay close because it's a very fast process.


It starts to bubble and bubble ... it rises to the pan. Stir constantly.


You see, I mean ... the mix rarely works!


Then the pan starts to thicken and shrink.


Bring to a boil quickly and stir constantly.


Then all at once ... quite thick, leathery and steamy! It does !!! Remove from heat immediately!


Step 3: Pour the caramel over the nuts

Pour in the chopped nuts. Or if you don't want nuts, just put them on the fire. Dip it in chocolate if desired, but we prefer these fried nuts.

In fact, it is best to leave the caramel overnight. It's hard to even wait until the next day to try a sample ... but it's better than you.
