There are some things I love more than chocolate ... but one of them is sweets. Caramel creamy and crunchy! A layer of delicious caramel with hints of toasted almonds for the perfect gift.

When my little one was little, we found out he was allergic to chocolate ... so we had to look for alternative “sweets”. Caramel is something everyone can agree with.

It’s amazing even without chocolate icing. My son is no longer allergic to chocolate, which is very nice.

Ingredients for toasted almond fondant:

2 sticks (1 cup) real butter
1 1/3 cup sugar
4 tablespoons corn syrup
4 tablespoons water

Toasted almonds to cover a plate
(Pour on a baking sheet ... about 275 * for 30 minutes, turning every 10)

And a silicone plate ... or a sheet covered with foil

You will also need a pan with a heavy bottom.
(Not a copper base ... they burn very fast)



Step 1: Toast the almonds

Cut the almonds with a knife and place them on a baking sheet or wrap around the edges of aluminum foil. Spread it to a thickness of one layer.


Step 2: Boil the ingredients

Put butter, corn syrup, sugar and water in a saucepan with a thick bottom.

My pans are a little small ... but they still work! Turn the stove to high heat.


Stir gently until it melts ... stay close because the process is very fast.


It will start to foam and bubble ... rise high in the pan. Continue to stir.


Look what I mean ... the mix is ​​hardly a match!


It then begins to thicken and sink into the pan.


Bring to a quick boil and stir constantly.


Then at about the same time ... it will become very thick, brown and start steaming! It was done !!! Remove from heat immediately!


Step 3: Pour the caramel on the almonds

Pour directly on the chopped almonds. Or just on the blaze if you don’t want nuts. You can dip them in chocolate if you want, but we love this toasted almond.

Caramel is actually best left overnight. It is very difficult to wait until the next day to try the sample. . . But it is better if you do it.
