Butter Toffee with Roasted Almonds Recipe

Caramelized butter recipe with toasted almonds

There are some things that I like better than chocolate... but one of them is butter fudge. Toffee is creamy and crunchy! Sprinkle toasted almonds over the sweet caramel to make the perfect caramel.

A wonderful gift for any day or season. Keep obsessing over the Christmas holidays! It's a sweet time of year.


When my youngest son was a child, we discovered that he was allergic to chocolate...so other “medicine” alternatives had to be found. Coffee is something everyone can agree on.

It's amazing even without a layer of chocolate. My son is no longer allergic to chocolate, which is a great relief for him.

Almond Butter Baking Ingredients:

2 sticks (1 cup) real butter
1 1/3 cup sugar
4 tablespoons corn syrup
4 tablespoons of water

Roasted almonds in a pan
(Spread in pan...about 275* for 30 minutes, turning 10 times)

And a silicone baking sheet…or a foil-lined dish

You will also need a pan with a thick bottom.
(no copper base...burns very fast)



Step 1: Toasted Almonds

Cut the almonds with a knife and place them in the pan or fold the edges of a sheet of aluminum foil. Spread them out so they are basically one thick layer.


Step 2: Cook the ingredients

Pour the butter, corn syrup, sugar, and water into a heavy-bottomed saucepan.

My pan is a bit small... but it still works! Turn on the stove.


Stir gently as it melts...stay close as this is a very quick process.


It will start to foam and bubble...it will rise in the pan. Keep stirring.


See what I mean... the mix barely fits!


It will then start to thicken and go back into the pot.


Bring to a rapid simmer, stirring constantly.


Then almost all at once...it will get quite thick, turn brown and start to burn! kitty!!! Remove from heat immediately!


Step 3: Pour the coffee into the almonds

Pour directly over the crushed almonds. Or if you don't want nuts on a baking sheet. If you want, you can dip it in chocolate, but we love toasted almonds.

Coffee really does taste better when left overnight. It's hard to wait until the next day to get a sample... but it's even better if you do.
