Caramel Butter and Roasted Almond Recipe

There are things I love more than chocolate... but one of them is caramel. The caramel is soft and crunchy! Use this sweet caramel with hints of roasted almonds for the right treatment.

A good treatment for any day and time of the year. Save this Christmas for sure! This is a delicious dish at any time of the year.


We found out he was allergic to chocolate when my boy... so I had to look for other "treatment" options. Caramel is something everyone will agree on.

It is beautiful even without chocolate icing. My child is not allergic to this type of chocolate lightening.

For Toasted Almond Buttercup Ingredients -

2 sticks (1 cup) real butter
1 1/3 cups powdered sugar
4 tablespoons corn syrup
4 tablespoons of water

Roasted almonds for garnish
(Put on a baking sheet...about 275* for 30 minutes, turning every 10 minutes)


You will also need a thick frying pan.
(Not under copper... burn very fast)



Step 1: Roast the almonds.

Cut the almonds with a knife and place on a baking sheet or wrap the ends of the foil. Lay it out basically so it's one layer thick.


Step 2: Boil the Ingredients

In a heavy bottomed saucepan, add oil, corn syrup, sugar and water.

My pan is small... but it still works! Turn the burner to maximum.


Shake gently when merging ይሁኑ Be close as it is a very fast process.


It starts gurgling and gurgling... rising high into the pan. Constantly stirring.


Hear what I mean... the mixture rarely works!


Then the pan begins to compact and shrink.


Cook quickly and stir constantly.


Then almost everything at once ... it will be very thick, swell and start to smoke! It's over!!! Remove from fire immediately!


Step 3: Pour the caramel over the almonds.

Throw in crushed almonds. Or, if you don't want nuts, spread them out on a baking sheet. You can dip it in chocolate if you like, but we love these roasted almonds.

Caramel is better than leaving overnight. It's hard to wait until the next day to try a sample...but it tastes better than you.
